Classic Salmon with Lemon-Dill Sauce
My father judged every kitchen by its salmon. This is the version that finally earned his nod — crisp skin, cool sauce, no fuss.
Ingredients
- 2 salmon fillets, skin on
- 2 tbsp olive oil
- 150 g Greek yogurt
- 1 lemon
- 1 small bunch fresh dill
- 1 clove garlic
- Salt and black pepper
Method
- Stir the yogurt with chopped dill, grated garlic, lemon zest, and a squeeze of juice. Season and chill.
- Pat the salmon dry and season the skin generously with salt.
- Sear skin-side down in hot oil until the skin releases and crisps, about 4 minutes, then flip and finish 2-3 minutes.
- Rest briefly and serve over the lemon-dill sauce with extra dill on top.
