Classic Salmon with Lemon-Dill Sauce

My father judged every kitchen by its salmon. This is the version that finally earned his nod — crisp skin, cool sauce, no fuss.

  1. Stir the yogurt with chopped dill, grated garlic, lemon zest, and a squeeze of juice. Season and chill.
  2. Pat the salmon dry and season the skin generously with salt.
  3. Sear skin-side down in hot oil until the skin releases and crisps, about 4 minutes, then flip and finish 2-3 minutes.
  4. Rest briefly and serve over the lemon-dill sauce with extra dill on top.
